Happy Birthday Dawn!

Its’ one of My Bowen student, Dawn’s, birthday.. As a birthday present, I made her something I haven’t made in 2 years! cupcakes!!!

IMG_0087 A little something for the curious younsters. Alcohol based cupcakes. Bailey’s hazelnut in everybite. Literally. In the cake, in the cream cheese frosting. Not in the hazelnut praline though.. But for Bailey’s lover, this is one to finish up!! Gulp Gulp…

The chocolate chip cupcake was not as simple as it sounds. Its Chocolate overload. Its like a chocolate chip cookie, but a cupcake version and with rich chocolate ganache, its death by chocolate. Chocolate in every single bite. Only for chocolate lovers. My cousin Jarren had three at one go!!! And chocolate loving husband literally ate it at every tea time and breakfast the past two days!

Cupcake Hero Entry: ABC Cupcake

After alot of procastination,i finally had the chance for my first cupcake hero entry of the year!!

Introducing
ABC Cupcake
A Bean and Coconut Cupcake

Red bean cheese cupcakes topped with Red bean coconut malibu filling and blue sprinkles..


Red: Red Bean
White: Cheesecake and dessicated coconut
Blue: Rice sprinkles

Recipe
Ingredients

250g Cream cheese
50g Sugar
1 1/2 tbsp gelatine
60g water
300g whipping cream
200g red bean filling
Directions:
1. Cream the cheese and sugar till light
2. Heat water to warm temperature (not boiling, about 50-50 degree celcius), add gelatine and stir till dissolved
3. Add gelatine mixture to cheese mixture and stir till combined
4. Whip the whipping cream till soft peaks form
5. Add to cheese mixture and mix till combined
6. Add red bean filling and fold it into the cheese mixure
7. Divide batter into muffin pans lined with cupcake wrappers
8. Chill in the refrigerator for 5 hours
9. Top with Red bean coconut malibu filling, sprinkle blue coloured rice or other preferred decoration and sprinkle desiccated coconut on top of the red bean topping.
Red Bean Filling:
150 g Red beans
1200 ml water
90 g sugar
1/3 cup dessicated coconut
1/3 cup malibu rum

1.Cook red beans in water till soft
2.Discard water and add sugar
3.Return red bean mixture to heat
4.Heat till mixture boils and remove from heat. This is the red bean filling for the cheesecake
5.Add dessicated coconut and malibu rum after adding 200g of red bean filling into the mixture. This is the red bean filling to be topped of on the cake.

Baking at 2am? Monkey Business Cupcakes

Orientation was gonna be on the next day, So I made some oatmeal banana cupcakes with Bailey's Creme Caramel Cream Cheese Frosting... It was an inspiration from my best baking buddy SiHaN... Hers are so out of this world that I had to try making some on my own... Sadly, they weren't as good as the ones she made, but still good enough for me! :) And I had no ideas or inspiration to decorate these little monkeys... So I had some fun with piping the cream cheese frosting onto it instead!!
The response for these were pretty good... So this is going into my to-sell list when I find time to do up my Sales site.. Haha..

Christmas Eve

Well... Due to feedback of superlaggy loading of my blog, I asked around and found out about Picasa... So I downloaded picasa2 from google.. Its actually a pretty nice program to use.. so lets pray for less lagginess... haha...

Back to Christmas Eve... Well Dave and I woke up late.. So we just hanged around.. After that, we went to his place for dinner... Before that, I caught a really cute shotof Mango...ain't that cute? Haha...

But Christmas Eve was pretty boring.. We waited and Cousin Ah Boo asked if we wanted movies or St James.. Well, both din appeal since one was ex and crowded while the other will be crowded and just as boring too...

So I suggested to go my sister's place instead... So Dave and I arrived at my sister's place at about 1030pm.. My two cousins, Cheng Xing aka Ah Boo(The pretty 881 dresser you saw in the previous in the entry) and Cheng Shi aka Ah Mi came super late... So they played poker and loser had to drink up.. Bleah.. My sister's Tenesse Whisky tasted like crap... (I mean it!!)

Think almost everyone drank till they vommitted except me since I slept instead.. HAha...

My First Cupcake Hero Entry~~~~ M&M Cupcakes

Yes.. Its M&M cupcakes.. No.. There isn't any M&M in my cupcake. But this cupcake has Malibu Rum with Minty Chocolate Bailey Frosting topped with coconut. With encouragement from Si Han, I decided to have a go at being a cupcake hero!! The cupcake was given out faster than I can eat them. Mummy didn't even get to try. But she doesn't like such cakes anyway. So here's the recipe!!

M&M Cupcake Recipe (serves 24)

Malibu Cupcake Base:

Ingredients

  • 2 1/2 cup all purpose flour
  • 2 tsp baking powder
  • 3/4 tsp salt
  • 1 cup butter, soften (take it out of the fridge 3 hours before you bake)
  • 1 1/2 cups sugar
  • 4 large eggs
  • 1/4 cup Malibu Rum
  • 3/4 cup milk
  • 2 tsp vanilla extract


Line muffin tins with cupcake papers (the recipe can make for 24 cupcakes)
In a small bowl, sift flour, baking powder and salt; stir to combine; set aside.
In a large mixing bowl, cream the butter using an electric mixer on medium speed until smooth.
Add the sugar gradually and beat for 3 minutes or until fluffy.
Add the eggs, one at a time, beating well after each addition.
Add the flour in three servings, alternating with malibu rum, milk and vanilla.
With each addition, beat until the ingredients are incorporated but do not overmix.
Spoon the batter into the cupcake papers, filling about 3/4 full.
Bake in a 350° oven for 20-25 minutes.
Cool the cupcakes in the tin for 15 minutes.
Remove cakes from the tins and cool on a wire rack before icing.

Minty Chocolate Bailey Frosting:

Ingredients:

  • 1 1/2 cups icing sugar
  • 2 tsp butter, soften
  • 2 tbsp Mint Chocolate Bailey
  • 2 tsp Peppermint Flavour
  • A few drops of green food colouring
  • Dessicated coconut

Beat all ingredients except dessicated coconut over a bowl of simmering water till the frosting forms a smooth paste

Using a spatula, spread the frosting over the cupcake

Dip the cupcake top in a plate of dessicated coconut. Decorate the top with anything desired or have it plain.

Voila!! Your M&M cupcake is ready!

If you like, you can add anything you like to the centre of the cupcake. For the one here, I filled the cupcake paper 1/4 full of batter, placed two hazelnuts, and topped with batter till 3/4 full.
I love this cupcake cuz it looks like Ninja turtle!!!

Oreo Cheese Cupcakes

Since I offered to make Oreo Cheese Cupcakes for my sister, so it was kind of the first thing I baked after exams.. Louis, My bro-in-law will be returning China tomorrow, so I just had to let him try my bakes.. I baked the cupcakes yesterday night and it looked like that..


So I proceeded to decorating the Oreo Cheese Cupcakes.. Melting the chocolate ganache.. Taking the rainbow sprinkles from the freezer.. and it became like that:Any idea how I felt after decorating the cupcakes? A hint is given in the picture below:

In the spirit of christmas, I tried decorating a few cookies with the theme of christmas.. This is one is really simple.. But I really like it! :-)

After spending my morning with the little cupcakes, I proceeded to town to see a doctor for my back problems.. My appointment is 1.30, but the doctor was seeing another patient, so I waited till two.. Doctor Loo was actually seeing a baby.. I saw a maid carrying a baby out.. The baby looked 3 months old.. When i entered theroom, Doctor Loo told me about the baby. The baby is actually a 3 year old kid.. When the baby first came to see Doctor Loo, the mum told her(Dr Loo) that the baby never cried before. When I saw the baby just now, it was crying.. Its a good sign.. Babies should cry, except that this ain't a baby.. I was like.. OMG.. So the baby how?? Dr Loo said that's why we should appreciate how lucky we are... I kind of realise I have a very great life despite a few back problems here and there.. Guess we're always complaining abt thesch this and the sch that, that we forgot how lucky we are to even grow to become what we are and get to attend sch to such an age... So we should treasure what we have and show more care to people who have less luck than we do.. So tml, I'm gonna start baking.. Dave and I will deliver it to orphanges and the home for the disabled.. Its Christmas.. I can feel the spirit..

Talk about the spirit of Christmas. I gave doctor Loo 4 of the cheese cupcakes I made.. and she gave me a recipe book called rotary buffet!! So nice of her.. The cookbook features Indonesia, Peranakan, Thai, Brunei, European and Chinese Cuisines!!! So cool!!! Can't wait to try some of the recipes..

So after that, I went to my sister's place to drop some of the cupcakes in her fridge. :D Hope the cupcakes put smiles on my sister and bro-in-law face!! I played with PAris.. Paris can fetch... She has this squeaky ball tat she loves to chew on.. The ball will squeak and squeak as she bites.. I wanted to take a video.. It was really cute!!! :D but too bad my phone was in my car..

I din really feel like going home yet, So I tried to find my way to Holland road to look for Pantry MAgic.. I couldn't find it cuz I din have its address.. But I found Holland village.. I neglected chill out zone I have never visited my entire life.. Its a really cool place and I love it.. Its filled with cultures ranging from Singpore to Europe to America.. they have all types of restaurants there.. There's NYDC, Haagen Daz, Swensens', Sushi Tei, Crystal Jade and many other little cafes I have neve heard off, but it had very welcoming ambience and outlook.. I swear I will bring Oinky there to chill out...

I found this cute bread cafe, called Provence Bakery, which reminded me of yakitate Japan's bread shop.. Very old European type of bakery.. The bread display looks like those from four leaves, but if you look closer at the bread they sell, I swore you would be fascinated by what they sell cuz none of them are available in the normal bread shops you see.. The labels even have Japanese Hiragana and Katakana on it..

But on top of the bread they sell, the layout of the bakery is homey and very nice European styled.. cool.. :D

After that, I found this 24 hours Cold Storage.. I was fascinted by the range of stuff they sold.. It was literally an Ang-Mo supermaket.. No wonder there were so many ang mo and angmo cafes in Holland V... But its a cool place nonetheless..

Den I went home, showered and napped.. Dave's dad treated me to Kuishin Bo and I ate to my heart's content.. Thanks Uncle Tan for the Dinner!!

Sushi and Oreo Cupcakes

Spend two nights at Dave's place.. Finally got started on the piece of crap from Flight Mechanics.. The notes.. seriously horrendous... Prof Eicher Low chose some textbook, and he landed up using loads of crap from other books. Yet his sldies say nothing about the equations he plunk there. Its like he just splank the equation there, without telling you wad each term represents or wad its for, how it comes about.. TO be honest, think this course needs a serious revamp... Our flight mech part 2 is scairng my butt off... The textbook is quite ok, but certain parts contain loads of mistakes and certain parts have explanations of Prof Eicher Low standard...



We had Sushi on Saturday night.. I brought some of my sushi ingredients over and Voila!!! It tastes kinda diffeernt from outside cuz I put Japanese Curry in it.. Lol.. But my Japanese curry was nice!!! Too bad I didn't have meat to top it with.. But big onions, carrots and potatoes were just as great!! Yummilicious!!!

Today was supposed to be Steph's boyfriend's birthday.. Since she didn't prepare anything for her poor boyfriend, I took the honour of making him some oreo cupcakes.. I think it needed more sugar.. :P Kinda bland for my taste... Oh well, at least there were some leftovers for Oinky and I to Munch on.. Hehe...

Nutty Granola Cheesecake


With an amount of cheese remaining in my fridge, I better use it before the moulds grow on them... On top of that, there is the granola cereal I have not been eating.. So here I present, Nutty Granola cheesecake... The base has a mixture of granola, oats and raising.. The top has walnut nougatine (made from walnut in caramaelized sugar candy) in cheesecake.. Yummilicious!!! I feel like eating one now!!! But since I'm gonna sleep soon, I think its better to save it for breakfast tml...

Well, Cookie is so cute... I can't resist taking a photo of her.. Hehe... Besides, Ah Miang kidnapped Mango again!!

Cheryl's Birthday


Its Cheryl's birthday and I baked 100 over stuff for her party at fortcanning today. Toovbad my carrot cake deco got spoilt by the cover on the way there...


Can you see that orange thing? Make a guess wad this thing is? Duh... Its a carrot... Wahhaa... So Today i made carrot cupcakes with lemon cream cheese frosting... Yummy!!! I loved it...

Such shots give me the feeling that there are alot of cupcakes around... feels so cosy.. Wahhaa....



You probably can't tell but there are two types of stuff here... The cocoa powdered marshmallow is a marshmallow chocolate topped blondie... The green one is bailey marble brownie topped with peppermint cream and chocolate chips...
This one here is nougat cheesecake.. I wonder if anyone could see the letterings: " Happy Birthday Cheryl" ... It seems to be a bad choice of colour.... Ever since I made it for my friends on Wednesday, i fell in love with this... Chopped nougatine almonds in cheesecake with a sweet pastry base. Yummilicious and not too sweet... Was quite taken aback by one of Cheryl's guest. She was like. So-so lor and she rolled her eyes... Erm.... Hmmmm... But she quite chio lar... So lets excuse her since she's chio... wahahah....
This is chocolate sandwich cookies cupcake. Its kind of like oreo cupcake, except that the chocolate sandwich cookies were made by me... Less sweet, more fragile and more choco-bitterlicious...
So this is the whole collection I baked for Cheryl's birthday. 22 Carrot cupcakes, 28 Chocolate Sandwich cupcakes, 24 Nougat cheesecake and 40 mini slices of Bailey Marble Brownies and 40 mini slices of Marshmallow chocolate Blondies..
